Ingredients:

Sweet Potato Filling:

  • 4 large sweet potatoes, peeled and cubed

  • 1/2 cup unsalted butter, melted

  • 1/2 cup milk

  • 1/2 cup brown sugar

  • 1 tsp vanilla extract

  • 1/2 tsp salt

  • 2 large eggs, beaten

Pecan Crumble Topping:

  • 1 cup pecans, chopped

  • 1/2 cup brown sugar

  • 1/4 cup all-purpose flour

  • 1/4 cup unsalted butter, melted

Instructions:

  1. Preheat oven: Preheat your oven to 350°F (175°C) and grease a baking dish.

  2. Cook sweet potatoes: Boil the sweet potatoes in a large pot of water until tender, about 15-20 minutes. Drain and mash until smooth.

  3. Combine filling ingredients: Stir in melted butter, milk, brown sugar, vanilla extract, salt, and beaten eggs until well combined.

  4. Prepare topping: In a separate bowl, combine chopped pecans, brown sugar, and flour. Add melted butter and mix until the topping is crumbly.

  5. Assemble: Spread the sweet potato mixture evenly into the prepared baking dish. Sprinkle the pecan crumble evenly over the sweet potato mixture.

  6. Bake: Bake for 30-35 minutes, or until the top is golden brown and the casserole is heated through.
